Elderflower and Elderberry season

Elderflower wines are ready to be drunk almost straight away but the wine made from the elderberries needs to be matured in bottles for as many years as you can stand to leave it - at least 2 or 3, to allow the bitter tannins to soften - but your patience will be rewarded with a gorgeous rich red wine!
