Clarity Ferm from White Labs - WLN4000 will reduce gluten in beers made from barley or wheat to below 20 ppm gluten which is the current international standard for gluten free. Clarity Ferm was designed to increase the colloidal stability of beer and reduce chill haze, which it does by preventing the precipitation of complexed polyphenols and proteins through the specific enzymes in its recipe which act in a way to which ensures the product doesnt affect desired beer parameters such as flavour, aroma or head retention, but is found to have the added bonus of reducing gluten levels in beers. Feedback from Brewstore's coeliac (gluten intolerant) customers have been thrilled to report that they can make a regular beer with Clarity Ferm that does not make them ill. Simply add the contents of the 10ml tube into your brew at the same time as you pitch your yeast. Enough for up to a 25 litre brew. Needless to say, any possibilities of chill haze - which can present itself in beers at low temps are taken care of at the same time! If you'd like to try a gluten free beer kit (no need for adding clarity ferm these kits are based on sorghum) the gone with the wheat beer kits get really good feedback, way better than commercial gluten free beers.
