The wine making kits in Cantina 5-day series are produced from grapes from the cooler northern Italian regions of Emilia and Tuscany, considered higher quality to the more common southern grapes from Spain or south Italy. This gives a more clean and complex wine. With the development of a highly specialized yeast/nutrient mix, Cantina kits ferment a wine in 4 days only (the 5th is used for clearing) and still retain most of the grape qualities.
